Garlic scapes are a deliously mild-galic flavored curly green shoot that grows up from many hardneck varieties. These are a treasured culinary treat that is enjoyed mid-May thru late June. They are a product of trimming the scapes off planted garlic to encourage bulb gowth underground. This is a top request at famer's markets and gourmet grocery stores all over the U.S. They have a very-short harvesting timeline thus in very high-demand. The scape is so versitile and can be used in so many ways. It's most popular is in pesto. It makes the finest and most green pesto you will taste. It goes well in oil, butter and vinegar infusions, pizza toppings, loaded potatoes, salads, soups, souffles, guacamole, stir frys, salsas, pickled, dried-out for herb-rubbed meats. They can be used in any recipe that calls for fresh garlic but the palet demands a milder-garlic taste. They can be used in substitution for anyting that calls for green onion or chives-or in addition to. They also can be prepared in much the same way you would prepare fresh asparagus: grilled, breaded or wrapped in bacon. I have even seen them added to flower bouquets at formal events. Scapes will last approx 4 weeks loosely stored in the fridge. Many blanche, then freeze in a small amount of cold-pressed olive oil. Sold by the 12-pack bundle. Limited quantities.
